OT- It's National Pancake Day

In honor of National Pancake day we can all share where we had our best hotcakes at. Whether that be a chain restaurant, greasy spoon or anyone else. For me it's a tie between the pancakes from scratch my grandma used to make and the ones from the Original House of Pancakes..... Mmmmmmm! Pancakes!

This post inspired me to make crepes. They were delicious, and it made my day better since I was feeling like garbage and working from home before it was posted. +1 billion mgopoints.

According to Google, Sunday was National Pancake Day.  But it looks like everyone (IHOP especially) is celebrating it on March 8.  

I was about to make some dinner pancake plans, but my premature celebration has left me sad and very tired suddenly.

Little restaurant in Pella, Iowa. Right on the square, Windmill Cafe is the name. I eat there once a year, 6am on the first Saturday in December. Opening day of deer season. They have great syrup, which is as important as the pancakes.

them from scratch, and most importantly, not to over mix the batter. Enjoy! Ingredients: 3 eggs 2 cups buttermilk 1 1/4 cups all purpose flour (add a bit more flour for thicker pancakes) (sifting can help eliminate lumps) 1 teaspoon salt 1 teaspoon baking soda (fresh) ¼ cup butter (melted) Blueberries/Fruit/Chocolate Chips – as desired Directions: 1. Put eggs in large bowl and beat lightly 2. Add next four ingredients into egg mixture (excluding melted butter) 3. Melt butter and add butter to mixture, mixing VERY LIGHTLY 4. DO NOT OVER MIX - Over mixing will make the Pancakes tougher 5. Heat griddle on Med setting (approx. 325 degrees), butter/oil griddle lightly as necessary and pour batter on griddle, spread out if necessary with spoon for thinner pancakes. Add fruit to pancake in pan if desired. After bubbles appear flip. 6. Serve with butter and Log Cabin maple syrup and get ready to enjoy the best, lightest pancake you’ve ever tasted! (Makes approximately 10, 8” pancakes)

Trader Joe's Cocunut pancakes are still my favorite.  Cook up at home using some butter to keep the pan from sticking and mix in some blueberries........bliss.

Yeah, there has been a TON of romance this season. Just like I was hoping for Rick to hook up with Michonne, I'm rooting for Abraham and Sasha to hookup too. Although, I think Rosita's a babe too. I'm also rooting for Eugene to see if he and his mullet can flip Tara. Haha
