Like essentially literally every other kind of food that exists on the planet, it's all here. There's tavern style, deep dish, Neapolitan, Sicilian, a multitude of Detroit-style places, even pretty legit late night NY-style slices at Gigio's.
One can't categorize all Chicago pizza as deep dish. Tavern style is just the American evolution of Roman pizza, much as NY-style is the American evolution of Neapolitan pizza.
Deep dish is different, but even within that there's significant variation. Pequod's is essentially Detroit-style, which is descended from Sicilian style, while Gino's East and Lou's are the more unique meat and cheese bombs.
Interesting that you say that, because the chocolate flavor that you're talking about is exactly what I like about Mexican coffees. I think with the lighter roast it's more akin to a high quality dark chocolate like Valrhona because there are still the fruity/cherry notes present, and those disappear with too much caramelization.
In fact, light roast Chiapas is generally my favorite coffee, though I love me some Central/South American beans and wet-processed Indonesian stuff too.
If you like cinnamon and tea you should be on the lookout for some Rou Gui oolongs, which can have huge cinnamon flavors.

I think French roast should be used for lower-quality beans where the natural flavors aren't great. For single origin beans I prefer a light roast all the way, even for espresso, so the flavors of the beans are magnified instead of covered up by the darkness of the roast and the acid is lower.
Come to think of it, the same actually goes for tea. There are some dark roast oolongs that I really like drinking (white2tea's Canton Canon for anyone curious), but they taste mainly of the roast and the charcoal used to do it so the quality of the tea matters less. But with something like dancong, tgy, or yancha, I want to taste the leaves and the roast.
