OT: Your Best (simple?) Recipe
August is around the corner, which means for the weak among us grilling season is coming to a close and/or tailgating season isn't far away. The meatiest info from fall camp isn't coming out of the submarine any time soon, let's talk food. The board is slow, why not?
What's your favorite recipe? Tailgating, grilling, whatever. If it's easy, even better.

Seriously, former Michigan footballer Marc Ramirez, who suffered from a bad case of Type II Daibetes, managed to cure himself through a regimen of healthy eating, and is now medication free.
He operates a web site at: www.chickpeaandbean.com. It contains a long list of great, easy to prepare dishes that are healthy and tasty. I regularly make many of them and my diabetes is in the process of reversing itself dramatically.
Thanks to Marc for sharing his story, which is chronicled in detail on the website, and his recipes. The website is worth visiting just to read his story. And the recipes are worth trying whether or not you have diabetes. And GO BLUE!

I don't think type 2 diabetes is curable. Managable yes. At least that's what my doctor told me when he diagnosed me awhile back. I've dropped 45 pounds, cut out sugar(more or less) and now have mine under control. Good for Mark as well.

This sauce is awesome and easy. It even won 2nd place in a sauce contest at a restaurant in Chicago. My personal favorites are on grilled salmon and chicken.
Equal parts:
- Honey
- Brown deli mustard
- Dijon mustard
- Brown sugar
Mix and enjoy.
But I know that for some things like "snow" and "rain" make grilling a pain. The only thing I stop for is wind, because I'd rather not turn my grill into a bomb.
Always thaw your turkey before you deep fry...

This corn, cheese and jalapeno dip has been a hit when I've made it. Not for those on a diet but super easy to throw in a crock pot and leave it.

Very interesting. I've heard a number of different things regarding the water pans but either way I'll be doing a bunch of experimenting.
You should be playing with the thing now, it will take you some time to lean to control temp etc. Unless you're using electric.
This one is easy, delicious, and great for summer.
Here's what you'll need:
- 1 lb. of small pre-cooked shrimp (60-80 ct)
- Two avocados, diced
- Juice of one lime
- 1 tsp. table salt
- 8 oz. can of tomato sauce
- One nice-size tomato, diced (small)
- One jalapeno, minced
- Several cloves of garlic, minced
- One bunch of cilanto, roughly chopped
- About 1/2 cup of chopped white onion
- 1 tsp of hot sauce
- Tortilla chips
Okay, here's how you make it:
1) Mix the lime juice, salt, tomato sauce, and hot sauce up in a large mixing bowl. I recommend using a bowl that has a lid for easy storage.
2) Add the shrimp, tomatoes, jalapeno, garlic, onion, and half of the cilantro to the sauce and mix that up
3) Chill the mixture in the fridge for about 1 hour
4) Then add the avocado, sprinkle some more cilantro over top, and serve it with the tortilla chips
Your definition of easy differs from mine. Sounds amazing though.
Pick up a cut between 1-1/4 and 1-1/2"
Salt and pepper both sides
Grill on med-high heat for 4 min, rotate 60º, and cook for 4 min.
Flip and repeat. Use the "pressure test" to determine how you want the meat cooked.

Pressure Test.
Make a very loose fist with your left fist.
Press the muscle between the thumb and forefinger. This is rare.
Slowly tighten your fist and press, your muscle will get tighter. This is simiar to cooking the meat from rare to medium to well done.
DId anyone else read this as "jar of marijuana and a jar of alfredo" something..something..
No? Ok.
My best quick marinade for chicken breasts:
olive oil (1/3 cup)
lime juice (2 limes)
smoked paprika
cumin
salt
pepper
1 tablespoon of yogurt, optional for tenderizing
Buzz everything in a blender. Amounts are approximate and up to you.
My best quick marinade for flank steak and the like:
1 small onion, chopped
1 kiwi, peeled and cubed
1 Tbs brown sugar
2 Tbs soy sauce
1 Tbs fish sauce (nam pla)
2 garlic cloves, peeled
Lime juice (up to 2 juicy limes)
vegetable oil (around 1/3 cup)
sesame oil to taste
salt and pepper to taste (remembering that the soy sauce adds sodium)
Buzz everything in a blender.
Lactic acid in yogurt starts to break down and tenderize meat, which in the short term is muy bueno for your pleasure.
The downside of yogurt is it burns easily because of the sugars in it, so you have to watch it more closely. I've done an all-yogurt marinade with a bit of olive oil and a bunch of pureed garlic and cilantro that is fantastic. Great for chicken kebabs.
My favoritest thing is smoking ribs or tenderloin, or sometimes a brisket, but I recently played around with hamburger recipes and came up with this:
1 lb ground beef (80% lean)
1-2 Tbsp Garlic Powder
1 Tbsp salt
A few globs of worcestershire sauce
handful of shredded mozzarella cheese
Mix em all together and make them into flat circles, then grill on hot, open coals, direct heat, for like 20 minutes or so, flipping a couple times.
I like them with a pretzel bun, hot mustard and cheddar cheese.

Beat the mixture until thoroughly pulverized.

Corn Casserole
Ingredients:
-1 can Whole Kernel corn
-1 can Cream style corn
- 1 box of corn muffin mix
- 4oz melted butter
- 1oz of sour cream
Mix everything in a bowl, pour into a casserole and bake at 350 degrees for 1 hr.
I like the sound of this. Maybe a southwest version with some shredded chicken and black beans and topped with picante sauce.
And a couple Dos Equis, because why not.
